Walnut Bread
One of my husband's biggest complaints with the Paleo Diet is that he can't have a sandwich. That led me to spend a considerable amount of time in the kitchen concocting different variations of breads with several failures I might add. This one is a nice sized loaf with excellent flavour and texture. It is good alongside a big bowl of stew and slices well for the occasional sandwich.
Ingredients:
1 1/2 cups almonds
1/4 cup ground flax seeds (or flax seed meal)
3/4 cup arrowroot powder
1/2 cup pumpkin seeds
1/4 tsp sea salt
1/2 tsp baking soda
2 eggs + 3 egg whites
1 tsp maple syrup
1 tsp lemon juice
1/2 cup walnuts chopped
1/4 cup flax seeds
How to:
1. Set the oven to 350 degrees C. and prepare your loaf pan by lining with parchment paper.
2. Grind the almonds in a food processor in quick pulses until a flour like consistency. Be careful not to over process and end up with nut butter. Set the almonds aside and grind the pumpkin seeds very fine. If you don't have any flax seed meal put 1/4 cup flax seeds in a coffee grinder and grind them up to a fine, flour like consistency.
3. Mix together all of the dry ingredients in a large bowl.
4. In a medium bowl, whisk the eggs and egg whites together until frothy. Add the maple syrup and lemon juice and stir.
5. Make a well in the center of the dry ingredients.
6. Pour the egg mixture into the dry ingredients and stir to combine.
7. Mix in the chopped walnuts and the whole flax seeds.
8. Pour the batter into your prepared loaf pan.
9. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
10. Cool on a wire rack before slicing.
My mom always brushed butter onto the tops of her loaves of homemade bread as soon as they came out of the oven, while they were still hot. It helps the loaf from being too dry so the crust doesn't break up while you are slicing it. In a Paleo diet butter is a bit of a no no so I brushed the top of this loaf with some coconut oil instead.
