The Evolution of a Recipe

First of all, sorry I haven't posted anything in over a week.  It has been a busy week.  I have picked up some extra classes at work and we had friends in from Halifax this week so I was busy cleaning and converting our work-out room to a guest room complete with chocolates on the pillows.  I have also run myself down enough to have picked up a sinus infection so at the completion of my very busy days the choice of blog or bed was definitely bed, no contest.  Anyway, to the task at hand.  When I was a kid my mom found a recipe for Bisquick Impossible Cheeseburger Pie.  It called for Bisquick mix of course but my mom never bought processed food and made her own homemade biscuit mix and used that instead.  When I started eating clean a couple years ago I took the old recipe, cleaned it up and added a bit of kick.  It is one of my boys' favourite meals so even though we have switched to a Paleo diet I don't want to take it away completely. I thought there must be a way to make it Paleo.  I figured that out on a night where I didn't have much time and was very low on ingredients.  I started cooking and pulling things out of the pantry and ended up making a good, Paleo version of the Impossible Cheeseless Burger Pie.  Here they are, all of the recipes in order.

Bisquick Impossible Cheeseburger Pie

Ingredients:

1 lb. ground beef
1 1/2 c. chopped onions (optional)
1/2 tsp. pepper
1 c. shredded Cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs

How to:

Heat oven to 400 degrees.  Lightly grease a 10 x 1 1/2 inch pie plate.  Cook ground beef and onions until brown, drain.  Add salt and pepper.  Spread in bottom of pie plate and sprinkle with cheese.  Mix remaining ingredients in blender until smooth, pour over meat and cheese.  Bake until brown, approx. 30 minutes.

My Cleaned up version
Impossible Cheeseburger Pie

Ingredients:

Olive oil for pan
1 lb extra lean ground beef
1 medium yellow onion chopped
1/4 tsp sea salt
1/2 tsp fresh ground black pepper
1 tin green chili's or 1-2 chopped fresh chili's (I like to use Jalapenos)
2 cloves garlic smashed and chopped
2 tsp chili powder
1 tsp cumin
1 tsp paprika
1/4-1/2 tsp cayenne
1/2 c. shredded light cheddar
1/2 c. fresh ground parmesan
1 1/2 c. skim milk
3/4 c. clean biscuit mix (see below)
2 eggs
2 egg whites

How to:

Heat oven to 400 degrees.  Lightly grease a large pie plate with Olive Oil.  Cook ground beef together with the onion, garlic, chili's, spices and sea salt and pepper.  Spread mixture in bottom of pie plate and sprinkle with cheeses.  Whisk together the remaining ingredients in a large bowl with a pouring spout (I use a 4 c. measuring cup).  Pour over meat and cheese.  Bake in pre-heated oven for approximately 30 minutes or until browned nicely.

Clean biscuit mix

2 c. stoneground spelt flour
1 c. amaranth flour
1 c. organic whole wheat flour
2 tsp baking soda
1 tsp sea salt

Mix all ingredients together in a Ziploc bag and shake to mix.  Use for biscuits, pancakes or cheeseburger pie.

My Paleo Version
Impossible Cheeseless Burger Pie

Ingredients:

1 lb. extra lean ground grass fed beef
1 med. yellow onion chopped
1/4 tsp sea salt
1/2 tsp fresh ground black pepper
2 fresh chopped Jalapenos (I remove the seeds so they aren't quite as hot)
2 cloves garlic smashed and chopped
2 tsp chili powder
1 tsp cumin
1 tsp paprika
1/4-1/2 tsp cayenne
1 1/2 c. Almond or coconut milk
3/4 c. Paleo biscuit mix (see below)
2 omega 3 eggs
2 egg whites
Fresh chopped or freeze dried cilantro
Fresh chopped or freeze dried chives

How to:

Heat oven to 400 degrees.  Grease a large pie plate with coconut oil or olive oil.  Cook ground beef with onions, garlic, chili's, spices and salt and pepper.  Whisk together the remaining ingredients and pour over beef mixture.  Sprinkle with the cilantro and chives.  Bake in pre-heated oven approx. 30 min. or until nicely browned.  Serve with Homemade Salsa and avocado slices.

Paleo Biscuit Mix:

2 c. Paleo All Purpose Flour
2 tsp baking soda
1 tsp sea salt

Put all ingredients into a large Ziploc bag and shake to mix.  Label (with the date) and use for biscuits (made with almond or coconut milk and olive oil), pancakes or Impossible Cheeseless Burger Pie.

  1. Thank you for this recipe! I haven't had my mom's cheeseburger pie for years (and didn't think I could) but this is a great Paleo alternative!
