Oven Fried Zucchini and Mushrooms
Back in Saskatchewan we had a local restaurant and pub called the Ice House Tavern. They made the best deep fried mushrooms and zucchini around. I have yet to find a place in Alberta that makes Pizza and burgers like theirs. Is their food Paleo? Heck no, but it was sure good. Every once in awhile I have a craving for an Ice House Pizza and fried veggies. I know that if I did go back home and have some of that pizza and deep fried stuff I would feel awful after and it probably wouldn't even taste good anymore just as a piece of bread now looks so tempting but tastes horrible. Your taste changes when you eat clean, whole foods.
The other night, I had a craving for fried zucchini. I had some zucchini and mushrooms in my fridge and figured if I can make paleo chicken nuggets, why can't I do the same thing with veggies?! Here's what I came up with.
Ingredients:
1 Egg
2 tbsp chicken broth
1/8 tsp garlic powder
1/8 tsp onion powder
1 cup pecans ground to a flour like conistency
1/4 tsp fresh ground black pepper
dash salt
1 med zucchini cut into thick slices or sticks
12 medium sized mushrooms washed (half any large ones so they are all about the same size)
How to:
Pre-heat oven to 400 degrees.
Whisk together the egg, chicken broth and onion and garlic powders in a small bowl. In a separate bowl combine the pecan 'flour', salt and pepper. Dip the mushrooms in the egg mixture and coat lightly with the pecan mixture. Place on a baking sheet lined with parchment paper leaving space between so the heat can circulate. Place in the pre-heated oven and bake for 10 minutes. While the mushrooms are in the oven prepare the zucchini in the same way arranging them on a separate, parchment lined baking sheet. Put the zucchini in the oven, carefully flip the mushrooms and bake for another 10-15 minutes until golden.
At the Ice House these tasty little morsels were served with ranch dressing to dip. I found a good website with lots of great Paleo dressings (just click for the link) and ranch is on there. I served these with steamed Tilapia and salad greens. They were great, tasted better than deep fried and satsified my craving completely.

Since you didn't answer your phone, how do you make pecan flour without it turning into pecan butter? My second batch was pretty coarse and didn't stick that well... Very tasty though.
